Basic Mexican Flan Recipe



Ingredients:
* 3/4 cup of granulated sugar
* 1 can of evaporated milk (12 oz.)
* 1 1/2 cups whole milk
* 4 large eggs
* 1 tablespoon honey
* pinch of salt
* 1 teaspoon vanilla extract

Directions
1. Place sugar in a saucepan over medium heat, stirring constantly. The sugar will brown and turn to liquid. Watch carefully so as not to scorch.
2. Remove from heat and immediately distribute the caramelized sugar equally across the bottom of the flan molds. Tilt and roll the molds so the liquid sugar mix coats the sides of the molds.
3. In a mixing bowl combine remaining ingredients and whisk together until the eggs are no longer recognizable as white or yoke.
4. Pour equal amounts of the custard mixture in the flan molds.
5. Pour about an inch of water into a large roasting pan. Set on an oven rack and then place the molds in the roasting pan.
6. Set oven to 350 degrees F and bake for one hour.
7. Insert a knife into the center of one of the molds and if it comes out clean, the flan is done.
8. Remove from oven and allow to cool to room temperature.
9. To serve, run a knife around the top of the flan where it contacts the mold. Flip over the mold onto a serving plate and then jiggle the flan loose so that it falls in one piece onto the plate.
