A very flavorful and filling dish, this beef tequila stew is a complete meal. We like to serve it with warm tortilla chips and tortillas.

Yield: 4-6 servings
o 2 pounds beef (boneless chuck, tip or round) chopped into 1 inch pieces
o 1/4 cup Unbleached Flour
o 1/4 cup Vegetable Oil
o 1/2 cup Onion; Chopped
o 2 each Bacon Slices, Cut into 1 " strips
o 1/4 cup Carrot -- Chopped
o 1/4 cup Celery -- Chopped
o 1/4 cup Tequila
o 3/4 cup Tomato Juice
o 2 tablespoons Fresh Cilantro, Snipped
o 1-1/2 teaspoons Salt
o 15 ounce can Garbanzo Beans
o 4 cups Tomatoes; Chopped
o 2 each Cloves Garlic -- Finely Chopped
1. Coat beef with flour.
2. Heat oil in 10-inch skillet until hot. Cook and stir beef in oil over medium heat until brown (5-8 minutes) . Remove beef with slotted spoon and drain.
3. Cook and stir onion and bacon in same skillet until bacon is crisp (about 5 min).
4. Stir beef back into pan and add all remaining ingredients. Heat to boiling; reduce heat. Cover and simmer until beef is tender, about 1 hour.
