The first time I ordered Chicken Fajitas in a restaurant, many years ago, I did not know what it was. It was love at first bite. Since then I have tried many recipes in an attempt to duplicate that dish at home.
This recipe is the one I finally liked. I found the same recipe may be used with steak or shrimp just by substituting for the chicken.
Many fajitas recipes have you wrap the fajitas in tortillas. To me that's a burrito. Not fajitas. We serve our fajitas on a sizzling cast iron platter with the tortillas on the side. Not only does this keep the fajitas hot, the sound of the sizzling platter when brought to the table brings "oooughs" and "ahaaaaas" from your guest. It's just plain fun!
Caution: the sizzling platter will burn careless fingers so be sure to caution your guest NOT TO TOUCH the platter. Do not serve in the sizzling platter if children are present.
The cast iron platter or grill is available at most major box stores. An alternative is to simply use a cast iron skillet.
