Chimichangas De Papas (Potato) Recipe



Ingredients:
* 1 lb potatoes, mashed
* 5 oz queso fresco (Mexican Cheese - You may substitute Monterey Jack)
* 2/3 cup sour cream
* 5 green onions, sliced
* 1 or 2 jalapeno peppers, roasted, peeled, seeded and chopped
* salt and pepper to taste
* flour tortillas
* oil to fry
* sour cream, green onions, black olives and salsa to garnish

Directions
1. Boil potatoes in plain water until cooked. Mash potatoes coarsely.
2. In a large bowl, combine mashed potatoes, cheese, sour cream, green onions, jalapenos, salt and pepper.
3. Fill tortillas with potato mix and fold in half.
4. Place 1 inch of cooking oil in a skillet and heat on medium heat.
5. Fry filled tortillas in hot oil till browned on both sides.
6. Drain cooked tortillas on paper towels.
7. Garnish with sour cream, green onions, black olives and salsa. Serve hot.
You can substitute corn tortillas for flour if desired.
For variety substitute cooking oil for frying with enchilada sauce.
