Cilantro Shrimp Recipe
Ingredients:
* 2 tablespoons butter or margarine
* 2 tablespoons vegetable oil
* 1 medium onion, chopped
* 2 cloves garlic, finely chopped
* 16 large raw shrimp, peeled and de-veined
* 2 tablespoons fresh cilantro, chopped
* Lemon wedges, as needed
Directions
1. Combine margarine and vegetable oil in a medium skillet and heat on medium heat.
2. Add onion and garlic to skillet and cook until onion is tender.
3. Add shrimp, and cook for 1 minute.
4. Turn shrimp. Cook another 2 minutes. Do not over cook.
Serve over rice. Pour pan juices over shrimp; garnish with fresh cilantro and lemon wedges.
Tip: A way to tell when shrimp is done is to observe the shape of the shrimp as it cooks. As the shrimp cooks it will curl. When shrimp curls into a form resembling the letter "C", it is done. If it resembles a letter "O", it is over cooked.
