You can find Mexican recipes, all over the internet, but many are not authentic South of the Border cuisine. Many recipes are Americanized versions modified beyond recognition. And, we include some here since many are very popular. But our focus is primarily to provide authentic Mexican recipes.
Mexican Cooking is a very unique cooking style. It utilize a lot of fried food, mesa, chile peppers, tomatoes and tomatillos. Popular seasonings include cilantro, cumin, lime and dried chile powder. In general, Mexican food is simple and not difficult to cook but it does employ a few specialized cooking techniques. Those special techniques are included in our recipes or in articles on this site.

Mexican Cooking Techniques
Mexican cooking techniques consists mostly of methods you are familiar with; namely frying, grilling, boiling and baking. You may not be as familiar with steaming, which is used for many Mexican dishes. Frying is perhaps the most predominate cooking method which evolved from the early days because ovens were not available. Meats used in Tacos, Burritos, Enchiladas and many other dishes are generally fried. Tortillas, which are widely used in Mexican recipes, are fried or cooked on a lightly greased skillet.

About Recipes:
Many experienced Mexican cooks use look, taste and feel rather than a written recipe when cooking. They just know when it looks right. Granted, this does take a bit of experience but, over time, you will rely less and less on written recipes. As you cook, be aware of the look, feel and texture of your combined ingredients. And taste as you go. Don't be afraid to change ingredients or quantities in recipes. Remember changes you make to recipes (write it down to begin) so you can repeat the recipe the way you like it.
Mexican Etiquette At The Table:
If you are visiting a traditional Mexican family's home for the first time, you should be aware of some common customs and etiquette. Family is very important and in rural areas tends to be quite large. The father is typically the dominant member of the family while mothers are generally secondary to that of their husband, although greatly respected.
Arriving late is not frowned upon and in fact is expected. Bringing flowers or a small gift is common but do not bring red flowers (they are viewed negatively). At the table wait for the host to indicate where you are to sit. Keep your hands above the table level when eating; do not put in your lap. Wait for your host to take the first bite before you begin eating. Finally, it is considered polite to leave a small portion of food on your plate.
Should you slip and break an etiquette rule, rest assured your host will be gracious. It's the Mexican nature to be polite to guest. So, just be friendly, respectful and enjoy the food and you will have a pleasant experience at the Mexican family table.
