While an Americanized Mexican recipe is what you get when you go to a Mexican restaurant in Toledo, Ohio. Many dishes such as nacho's, chimichangas and fajitas are really American Tex-Mex food, not authentic Mexican. True Mexican recipes use a lot of corn and beans and they are not always spicy. Tex-Mex uses more meat, salsa and sauces. Both often utilize mesa, chile peppers, tomatoes and tomatillo. Cocoa (native to Mexico) is popular in Mexican cuisine. Also, smoke-dried jalapeno chili (Chipotle) is common in Mexican cooking. Popular seasonings include cilantro, cumin, lime, garlic, onions, chili powder, oregano and cinnamon. Frying is the predominate cooking method. Both authentic and Tex-Mex recipes are very tasty and both are popular. Therefore, we have included both style recipes here. Mexican cooking techniques consists mostly of methods you are familiar with; namely frying, grilling, boiling and baking. You may not be as familiar with steaming, which is used for many Mexican dishes. Frying is perhaps the most predominate cooking method which evolved from the early days because ovens were not available. Meats used in Tacos, Burritos, Enchiladas and many other dishes are generally fried. Tortillas, which are widely used in Mexican recipes, are fried or cooked on a lightly greased skillet.

Mexican Etiquette At The Table:
If you are visiting a traditional Mexican family's home for the first time, you should be aware of some common customs and etiquette. Family is very important and in rural areas tends to be quite large. The father is typically the dominant member of the family while mothers are generally secondary to that of their husband, although greatly respected.

Arriving late is not frowned upon and in fact is expected. Bringing flowers or a small gift is common but do not bring red flowers (they are viewed negatively). At the table wait for the host to indicate where you are to sit. Keep your hands above the table level when eating; do not put in your lap. Wait for your host to take the first bite before you begin eating. Finally, it is considered polite to leave a small portion of food on your plate.

Should you slip and break an etiquette rule, rest assured your host will be gracious. It's the Mexican nature to be polite to guest. So, just be friendly, respectful and enjoy the food and you will have a pleasant experience at the Mexican family table.

Cooking Tips
* To put out the fire from too hot chile, take a spoonful of sugar or salt with lime juice.

* When frying steak, to help tenderize, do NOT heat oil first and then add steak. Start with meat in cold oil in a cold skillet.

* If you are unsure of shrimp's freshness. Dispose of it. Do not use. Shrimp spoils easily and can make you very sick.
