So what is Tex-Mex? It's what most people outside Mexico call "Mexican Food". It is an Americanized version of Mexican food. Using ingredients readily available in the United States, dishes have been created incorporating Mexican cuisine. Tex-Mex recipes originated in the Southwestern states of Texas, Arizona and New Mexico. California then added it's own special flair creating dishes that have probably never seen a dinner table in Mexico.

If you go to any popular Mexican chain restaurant in the United States, you are probably eating Tex-Mex. Tex-Mex recipes are distinctive for their use of mounds of cheese, guacamole and sour cream. The fast food restaurant breakfast burrito, taco salad and chile burgers are pure Tex-Mex.
